Baking With Kim – Scones

I do occasionally bake from scratch, it’s just that usually I’m too lazy, which is what last weeks Baking With Kim showed you.

Today I made scones from the Edmonds Cookbook. I don’t know if I’m doing it wrong but scones are always SO messy when I make them! I end up with half the mixture lodged under my nails. It’s worth it for the end product though.

Dry scone mixture

Cut 75g of butter into 3 cups of flour + 6 teaspoons of baking powder + 1/4 teaspoon of salt.

Scones about to go in the oven

Mix in 1 – 1+1/2 cups of milk. Knead out the scone dough and cut into 12 pieces. Place in a 220°C oven for 10 minutes or until they’re golden.

Mmmm cream

While the scones are cooking prepare the all important toppings. Whip that cream, it’s the reason I make scones!

The finished product. Topped with The Boys mums home made jam and whipped cream. Delicious!

    Ah, the fabled scone gene. My mum and I have come to the realisation that some people can make scones and some can’t. We figure there must be a gene involved because the inability appears to have been passed down. The last time I made scones, they were so hard that they bounced (ask Holly, she was there).
    You apear to have the gene though, I am jealous. Also, I want scones! *drool*

    Hmm you could be right about the scone gene.
    I think my gene needs a better oven to be fully utilised though. It’s old and only seems to cook from the bottom so everything ends up much darker on the bottom than on top!

    yuM! When i used to try make scones it’d always be fail. Did the Recipe have Lemonade in it? Apparently those are the easiest ones to make.. with a can of lemonade.

    Na, this was the Edmonds cookbook recipe, I wrote it out above. No lemonade. But that sounds good!

    Oh I was fantasising about scones today, which is weird because I haven’t eaten them in a looooong time. Probably because I don’t eat cream anymore and you can only have them warm with jam and cream. They are hard to get right, without that icky baking soda taste. Yours look so good…
