Baking with Kim – Peanut Butter Cookies

Because I’m a rather lazy housewife I always look for the easiest recipes when I bake. Peanut butter cookies are one of the simplest things to make and take hardly any time. Another great thing about this recipe is that it can easily be gluten free! Just omit the baking powder, many recipes don’t include the baking powder anyway.

  • Mix a cup of peanut butter with a cup of sugar
  • Stir in one teaspoon of baking powder and an egg
  • Place spoonfulls on a baking tray and flatten with a fork, make sure they’re at least an inch apart
  • Bake in a 350°F oven for 10 minutes
  • Leave to cool for 5-10 minutes

So easy! I altered the recipe a bit so I could use a whole jar of peanut butter.
I mixed the 375g jar of peanut butter with one and a half cups of sugar, one and a half teaspoons of baking powder and two eggs.
There wasn’t enough room on the tray to space them out properly so I put them closer. Bad idea! These cookies spread like mad and ended up becoming one big cookie!

They will be quite crumbly when they’re just taken out of the oven but they harden up a little more once they’re cooled.

These very dense, very peanutty cookies are great with a glass of milk.

    Ooooh, that looks delish!!! Stinkers!!! Just realized I don’t have any PB in the house :( Hubs has the car (yes, we share) so I’m stranded w/o any PB. Must try and tell you how they turn out.

    Why does Blogger mess things up? It says you posted 1 day ago…but yesterday it posted the right time…argh, I was like, “when’s this girl gonna post?” I’m like an addict now…yikes.

    Hehe, you said “housewife” I didn’t know you were married! I wasn’t sure if “The Boy” (which funnily enough is what my FIL calls my hubs S) was a BF of a hubs…not that it matters, but just nice to know. Hehe, don’t you sometimes find that the smartest ones can be really dumb, about little things??? Eight…reallly??? LMBO (I’m a PG kinda girl – blame my parents). S is a terrible speller as well and he reads funny sometimes…he used to think colonel was pronounced like it’s spelt, I had to tell him to say it like a popcorn kernel. He did comp engineering and his formal title at work is “Principal Architect” for software.

    And I promise, I really do know how to spell “Shrimp” (though restos sometimes scrimp on the shrimp) and “Bulgar”…imagine if I did order the “Vulgar” salad??? The server would just start yelling obscenities and I’d be like, wth???

    Oh and thanks for the comment on my blog name. I knew I wanted to start one but didn’t have a name for it. It came to me one night when I was wired and couldn’t sleep. Aside from dressing up , it’s also how I like to order my salads…Clever? Hehe, it comes in waves, spurts…or every 10 yrs…whatever.

    Sorry for being inconsistent with my posting times. I post once a day on weekdays but times vary. Could be anywhere between 2pm and 5am.

    I’m not actually married, but I tend to refer to myself with the marriage adjectives these days. I’ve been living with The Boy (who is also an S) for over 6 and a half years, so we’re practically married, but not…don’t get me started.

    Lol I just thought you were talking about something rather exotic that I hadn’t heard of before, but thought vulgar was a strange name for food!
